
The Birthday Express
Three cakes are needed in making Birthday Express. This is a fascinating
creation cake. The light fruit cake mixture baked in a nut loaf tin is the main
part of the engine. An accustomed nut loaf mixture may also be used. The other
cakes are made as stated in the following prescription. This mixture is
competent for each other. It wasn’t made perfectly if the one element is absent.
Mixture must also be sufficient for all cakes.
Here are the cake ingredients:
- 225 grams butter or margarine
- 4 eggs
- 450 grams sugar
- 6 tablespoon milk
- 4 teaspoon vanilla essence
- 390 grams self raising flour
- Pinch of salt
In the normal way, make over the cake mixture and cut it up dependently
between two tins. The 18 cm square sandwich and a 23 cm square slab. Simmer in a
moderate oven and to cool. The cakes are best made the day before they are to be
iced, so that the cake is still looking fresh and may not crumble.
Cutting and shaping:
Cut the slab cake into nine even-shaped squares. The two of these squares is
for the coal tender and the bottom of the barrel for the carriages. For the back
of the engine, cut a 10 cm by 10 cm square from the smaller cake. Well turned-out
the light fruit cake that was created artificially in nut loaf tin so that both
ends are equal.

For the engine:
Use some of the apricot jam for brushing the loaf cake and cover with a layer
of almond paste. Get the two of the squares cut from the larger cake and place
the one on the top of the other and covered with almond paste. For the steam
funnel, cut a piece from the top of the layer 5 cm deep and 5 cm wide. This form
is coal tender. Make a double amount of moderately hot icing and a half color
lemon and the remainder red. Color the back of the engine, the loaf cake and the
steam funnel with red and coat the tender of lemon. Allow to establish before
proceeding.

To assemble the engine:
In positioning the engine, place it with 4in. piece of red iced cake at the
back. Cover with a piece of thin cardboard with silver paper and brush the
surface with egg white sprinkle with coconut. Use lifesavers for lights, a
marshmallow for the whistle and some licorice on the coal tender for the coal.
Set the coal tender at the end canal with white royal icing and for wheels,
decorate with round flat sweats. Place a small candle in the funnel.
The carriages:
These are invented mentally from the 15 cm squares incision from the large cake.
Allow to set after brushing with thin apricot jam, covered with a layered almond
paste and coal with warm icing. Use a round sweet for wheels, embellish the
border with royal icing through a small rose tube and pipe a name on each.
