
Chocolate Icing
Add a rounded dessertspoon of cocoa to the icing sugar before sifting. In
order to overcome the dull surface caused by overheating, a few drops of
glycerine may be added to give a gloss.

Icing the rake. To prevent the icing from running down the sides of the cake and
spoiling the appearance, pin a band of greaseproof paper round before pouring
the icing on the top.
