
The Circus Cake
At first glance the clowns and performing animals on this cake may appear
difficult to make. Do not draw the shapes from memory; trace them from a story
book on to ordinary luncheon waxed paper, and, using a fine writing tube or a
funnel of strong paper with a fine point, outline the shapes, using colored
royal icing. Allow to dry thoroughly before filling in.

Take some royal icing, color according to taste, thin down to a running
consistency with water or lemon juice, and place in another paper bag, with the
opening a little larger than that used for the outline. If using a metal tube,
choose a No. 2 writer. When various colors are to be used for the design, have
them all ready first.
Completely cover the inside of the design with the soft icing, taking care that
it does not go over the outline. A fine paint brush will help to ease the soft
icing into the small corners. Leave to dry overnight.
Place the paper containing the icing on the edge of a board and gently ease the
paper from one side. Turn the paper and ease the other side. Attach the shapes
to the cake by placing a dab of royal icing on the back of each. Careful
handling is necessary when removing these iced shapes from the paper to prevent
breaking.
