
Lace Wedding Cakes
Make a 225 grams wedding cake mixture in an 20 cm round cake tin.
The “lace” design makes a most effective decoration for a wedding cake, the
pattern for which may be copied from the material used in the bridal gown.
Cover the cake in the usual way with fondant icing and allow becoming quite dry
and set. Draw the design on waxed paper, and trace it lightly on the cake with a
pin. The outline may be dotted or lightly drawn. Use a fine writing tube to
outline the pattern in royal icing, and allow drying before proceeding further.

Take some of the same icing, and thin it down to a running consistency with
lemon juice or water. Flood in the outline and when dry, fill in the centers
with fine dots, using a stiffer royal icing than that used previously. Outline
the leaves and stems with a fine writing tube.
Ruffle some bridal tulle and fix to the covered board, attach with icing and
place the cake in position. Finish off with small bows of ribbons, piped roses
and leaves.
