Making Basket Weave from Icing

Basket weave as a decoration is applied directly to the cake. It is used on the sides of a fruit cake to represent a basket of fruit or flowers, or for a christening cake made in the shape of a bassinette.

Always commence at the top of the cake. The basket weave tube alone may be used. or the design may be varied by employing a writing tube for the vertical strokes and the basket tube for the horizontal ones.

Guide lines may be marked with a pin or fine skewer. Have the royal icing about the same consistency as that used for flowers.

Hold the bag in a slanting position, and make the first line along the top of the cake horizontally. Now make vertical lines at regular intervals' over the first line. Follow with another horizontal line. being careful to see that the icing covers the end of the vertical one. The second row of vertical lines is placed midway between those in the first vertical one.

Tip: Always commence design at the top of the cake using either the basket weave tube alone or in combination with a writing tube for the vertical strokes. The guide lines on the cake may be marked with a fine skewer or a pin.
