Making Grapes from Icing
Grapes. Have the royal icing a little firmer than that required for
lattice work and select a No. 1 and No. 2 writing tube. The grapes may
either be piped directly on to the cake, or else on to greaseproof paper
and lifted off and applied to the cake when dry. The former is the
better, method.
Pipe a foundation in the shape of a rough triangle by running the
tube backward and forward. Allow this to dry slightly, then, holding the
tube in a slanting position, force the icing out in small bursts. As
each small round of icing is made, press the tube lightly into the
foundation, but do not lift it from the cake. Fill in the whole triangle
in this manner, graduating the size of the grapes as the tip of the
bunch is reached.
Tendrils. To make the bunch of grapes appear more realistic, it is
usual to add a few fine tendrils. These are executed with a fine writing
tube. Touch the cake lightly with its tip, then twist and curl the fine
thread as it issues from the tube. |
