
Medallion Wedding Cakes
Make a 550 grams wedding cake mixture in 28 cm and 13 cm square tins.
Cover with fondant icing. The design on this cake was taken from the pattern on
the bride's brocade wedding gown. To do this take a small piece of the wedding
material and trace the outline of the design on a piece of waxed paper. Measure
the area of the pattern and calculate how many patterns may easily be applied to
each side of the cake. Outline the design on to the cake by tracing with a pin,
a dotted outline is easiest to follow.

Using a fine writing tube and royal icing, outline the design, carefully
following the pattern. Small dots round the inside of each petal will make it
stand out more effectively. This supplies the decorations for the sides of the
cake.
For the corners make some lace medallions by repeating the design on pieces of
net. Attach these to the eight corners of the cake with a little royal Icing.
Using tiny forget-me-nots, make three scallops on the top of each cake. Place
the lower tier on a board covered with silver paper and a tulle ruffle. Fit the
pillars in position, mount the upper tier and shell-edge the borders.
