
Patchwork Icing
The special modeling fondant is used for patchwork as ordinary
fondant is too soft. By colouring this paste and modeling in thinly, almost any
kind of fancy work design can be cut out and pieced together, patchwork fashion,
on a cake.
The pretty Dutch scene is one example. Cut a fancy work transfer into a number
of pieces and use a pattern for the different coloured fondants. Transfer them to
the cake and reassemble to form the
same design. To keep the pieces in position on the cake, brush lightly with egg
white.
Use a fine paint brush to give the necessary details to the faces and figures.
Parisian essence and pure vegetable colorings are necessary for retouching.
Patchwork icing: Using a fair of sharp scissors cut the transfer into as many
pieces as needed.
- Colour the fondant and roll thinly. Place the pattern on it and cut out
with a clean outline.
- Lift the patchwork pieces on the cake, keeping them in place with a
brushing of egg white.
- For good detail, mark the outline and features with coloring applied
with a fine paint brush.
- The sides of the cake are decorated with more cut-outs. Place the cake
on a covered board and shell-edge the base.
- Finish with flowers moulded from some of the fondant, piping the stamens
with a fine writing tube. Tulips were used here as the scene is Dutch.
