
Single-Tiered Round Wedding Cakes
Make a lib. rich wedding cake mixture in a 25 cm or 28 cm
round cake tin and allow to cool. Cover the cake with almond paste. then fondant
icing. Allow to become set and dry. Make a raised lattice centre piece for the
cake, and prepare some moulded or piped roses and piped forget-me-nots.
Place the cake on a covered board, keeping it in position with a little royal
icing. and divide the top equally into four sections. Pipe a triangular lattice
shape in each, shell-edge the longest side of the lattice with a plain tube. and
join the design with dots of royal icing.

Arrange the raised lattice in the centre of the cake and surround it with roses.
leaves and trails. Tie a band of satin ribbon round the cake and decorate it at
intervals with forget-me-nets.
Shell-edge the border and arrange clusters of roses and leaves at regular
intervals.
