Using the Star or Rose Tube
The star, or rose tube, is the most easily handled in the icing kit.
It provides plenty, of scope for creative ideas. and the beginner will
find it useful for making stars to form the edging for a simple cake.
Stars are made in the same way as dots. Use an icing of good, strong
consistency, otherwise it will not keep its shape when piped. Hold the
bag in an upright position, and lightly touch the tip of the tube on the
cake. Apply pressure to the bag until the dab of icing required g is the
required size. Cease the pressure, and lift the tube quickly from the
cake. As with dots. unless this is done smartly. the star will have a
long thread which will spoil its appearance.
Graduated stars can be made by varying the amount of pressure applied
to the icing-bag, and for festoons. mark guide lines on the side of the
cake. using a small, curved shape. For a shell edging. hold the bag in a
slanting position and force the icing through the tube. As it forms a
round shape. draw it to the right. pulling the icing to a point. Without
lifting the tube from the cake. commence the next shell, starting it by
piping over the point of the first so that each successive one overlaps.
