Types of Cake Icing
The two basic types of icing for decorative work are the
hard-setting royal icing and the softer fondant paste, with its several
variations. Frostings are dealt with in the section on Simple Icings.
Royal Icing
Royal icing is made from a mixture of egg white and pure icing sugar.
It is the only icing suitable for the more elaborate tube work and sugar
flower-making.
Fondant Icing
Fondant icing is simple to make and easy to apply. The result is a
smooth, even surface on a cake, entirely without brush or knife marks.
When used in place of almond paste for an undercoat it may be combined
with desiccated coconut and flavored with almond essence, or it may
simply be flavored with almond essence alone, or else with orange flower
water.
Modelling Fondant Icing
Similar to fondant icing but this is recipe is more suitable for
bigger flowers and lilies.
