
Vienna Icing
Ingredients:
- 60 g butter
- 170 g sifted icing sugar
- 2 Tablespoons sherry or fruit juice
Cream the butter and gradually add the icing sugar, beat until well mixed and
add the flavouring. The icing may be coloured as dented. This quantity makes
enough to top two dozen patty cakes, or will fill and cover the ton of a 18 cm sponge.

Orange Vienna: Add one level teaspoon grated orange rind.
Chocolate Vienna: Sift one level tablespoon of cocoa with the icing sugar.
